Born in Poland, Rubinstein emigrated to Australia in 1896, after refusing an arranged marriage. She spent some time as a bush governess and later as a waitress in Melbourne's Winter Garden tearooms, before opening a salon in fashionable Collins Street.

She left Australia for London in 1908.
